Our Story
Hot Chix Hotcakes and Chicken was years in the making from the idea to our first truck. Let me start by saying neither Whitney nor I have any real restaurant or food service experience. Thats important to note and hopefully show how big of a step of faith this endeavor really was. I actually came up with the idea in 2014 . I love breakfast food especially chicken and waffles. During a conversation with a friend about chicken and waffles I had a “light bulb” idea moment. “What if you could have that sweet and savory combination without a fork and knife?” He literary lol’d and I said “ like a pancake fried chicken taco” then I said “I’m going into the chicken and pancakes business and I’m calling it Hot Chix”. As a designer by trade I went home and created the logo, branding and I even mocked up a truck design. Whitney and I have been fans of food trucks for a long time but with 4 kids who are not interested in Korean bbq, dumplings or pretty much anything. I knew they all loved pancakes and chicken. I pitched the idea to family and friends, everyone thought it was a great idea. Finally at the end of 2016 we decided to make Hot Chix a reality. We are a family of 6, Whitney and I both worked for a non-profit at the time so we sacrificed and did everything we could to get the first truck (actually a trailer) built. We tried to tackle all the regulation, insurance, fees, permits and miscellaneous expense that go along with starting a food truck. It was a lot and we were very surprised by how much we did not know. We submitted all of our paper work in February of 2017 and the truck was approved in May of 2017. In June of 2017 Whitney lost here job, as a start up business there was no way we could afford to pay her or anyone else for that matter a salary. So again we sacrificed and hustled every opportunity we could get. The food truck business is much harder work than we thought it would be and it cost way more than we thought it would.
